Protein Power Balls

Packed with flavor and natural ingredients, these power balls are only 86 calories, amd are guaranteed to boost your energy…. and your spirits!

Ingredients:

  • 1/2 cup Puffed Millet
  • 1 cup Puffed Rice or Wheat (unsweetened)
  • 1/2 cup Diced Prunes
  • 1/3 cup Chocolate Chips
  • 1/4 cup Sesame Seeds
  • 1/3 cup Sunflower Butter (at room temperature)
  • 1/2 cup Honey
  • 1 cup Unsweetened Coconut

Directions:

In a large bowl, combine the puffede millet and rice or wheat. Add the prunees, chocolate chips and sesame seeds.

Stir in the sunflower butter and the honey. It will be very sticky but that’s how you form the perfect balls!

Cover the bowl and refrigerate for 30 minutes.

Spread the coconut on a large plate.

Scoop 1 tablespoon of the mixture and form into balls by rolling between the palms of your hands.

Roll the balls in the coconut and place in airtight container and store in refrigerator for up to 1 week (if they last that long!), or in the freezer in ziplock bag for up to 1 month.
