Flourless Pumkin Chocolate Chip Muffins

These flourless pumpkin oat muffins are soft, cozy, naturally sweetened with maple syrup, and so easy to make. Everything goes into the blender, then straight into the muffin tin. My kind of recipe.

Healthy Pumpkin Oat Muffins

● 1 cup pumpkin purée
● 2 eggs
● ⅓ cup pure maple syrup
● ¼ cup almond butter
● 1½ cups rolled oats
● 1 teaspoon baking soda
● 1½ teaspoons pumpkin pie spice
● 1 teaspoon vanilla
● Pinch of salt
● ⅓ cup dark chocolate chips, optional

Instructions

1. Preheat oven to 350°F and lightly grease or line a muffin tin.
2. Add everything except the chocolate chips to a blender.
3. Blend until smooth.
4. Stir in the chocolate chips, if using.
5. Divide the batter among 10–12 muffin cups.
6. Bake for 18–22 minutes, until the tops are set and a toothpick comes out mostly clean.
7. Let cool for about 10 minutes before removing from the pan.
