Kale Salad with Lemon Garlic Dressing

This recipe delivers on taste and nutrition and is ready in mere minutes. Start with a base of kale and add in whatever you have on hand. I had dried cherries, sliced almonds, pomegranate seeds, apples, and pears. But you are in no way limited to those items. The 3 ingredient dressing is a snap, and all that I will insist upon is that you use good olive oil (as Ina Garten ALWAYS recommends!). It is best to make and dress this salad ahead so that the dressing is fully absorbed into the kale leaves. kale is much tougher than regular lettuce so leftover salad is a good thing!

Ingredients:

Kale

Add-ins such as fruit, dried fruit, or nuts of your choice

Directions:

1. To make the dressing: Add 4 cloves of minced garlic to 1 1/2 cups of good olive oil and the juice of 4 lemons. Add salt and pepper to taste.

2. Toss the kale and extras with the dressing and let sit for at least 30 minutes…the longer the better.
