This could be absolute favorite sweet potato recipe. No mandolin is required, just a regular potato peeler, some sugar and spice and everything nice!
Ingredients:
• 1 large sweet potato, peeled into thin strips
• Light cooking oil spray
• 2 tablespoons melted butter (or vegan butter)
• 2 tablespoon brown sugar
• Pinch of salt
• Cinnamon, to taste
• Pecan pieces
Directions:
1. Preheat oven to 450°F.
2. Wash and peel an entire sweet potato. Pat the peels dry with a paper towel.
3. Place an empty baking sheet in the oven for a couple of minutes to heat. Remove, lightly spray with oil, and lay the sweet potato peels on the sheet, being careful not to overcrowd.
4. Bake for 15 minutes at 450°F, or until the edges begin to crisp.
5. While the peels cook, mix together 1 tablespoon melted butter, 1 tablespoon brown sugar, a pinch of salt, and cinnamon to taste.
6. In a separate pan or small baking sheet, toast the pecan pieces in the oven for 5 minutes, then stir them into the brown sugar–butter mixture.
7. Remove the peels from the oven and drizzle the brown sugar butter mixture with pecans over the top. Serve warm!
