Mediterranean Spaghetti Squash Bowls

When I first saw this on Tik Tok, I new I had to recreate it. It is so easy to prepare and the results are deliciojs. Jeff and I have this atg least twice a month and look forward to its left overs the next day! If you love spaghetti squash, feta cheese and tomatoes, you’re going to have this recipe on repeat!

Ingredients:

1 spaghetti squash, have with seeds removed
2 large cloves of garlic
1/2 cup olive oil
1 1/2 cups cherry tomatoes halved
Salt and pepper
1/4 cup balsamic vinegar glaze

Directions:


Poke holes in the squash and soften for 10 minutes in microwave for safer slicing in half
Scoop out seeds
Add 2 tablespoons of the olive oil and sprinkle with salt and pepper.
Halve a block of feta cheese (or plant based version) and place each half I to a spaghetti squash half
Top with minced garlic then add the cherry tomatoes.
Drizzle remainder of oil and sprinkle salt and pepper.
Bake on baking sheet at 400 degrees for an hour to an hour and a half or until squash strands are soft and pliable.
Remove from oven and with a fork, begin to separate the strands of squash.
Blend the cheese and tomatoes with the squash strands
Drizzle with the balsamic glaze.
To serve 4, cut each half in 2.
