Green Goddess Salad

If ever there was a salad to make right now, this one is it! A little while ago this salad went viral on TikTok and for good reason. It is fantastic! All vegan, this is one fabulous Green Goddess Salad. Using a handful of nuts, basil, spinach and nutritional yeast (which you can get in any grocery store) is key to the success of the dressing. Do not skip any of the ingredients! Nutritional yeast has a light cheesy taste and the consistency is perfect for this dressing. Trust me, you will thank me, and then some!! Serve it alongside fish in a taco or scoop it out with a chip. The possibilities are endless!

Ingredients:

FOR THE SALAD:

  • 1 small head of green cabbage, chopped
  • 3-4 Persian cucumbers, chopped


FOR THE DRESSING

  • 1 cup of Basil Leaves
  • 1 cup of Spinach Leaves
  • 2 cloves of Garlic
  • 1 small Shallot
  • Juice of 2 Lemons
  • 1/3 cup of Olive Oil
  • 1/3 cup of Nuts of your choice (I used Cashews and Walnuts)
  • 1/3 cup of Nutritional Yeast*
  • 1 teaspoon of Salt
  • 2 tablespoons of Rice Vinegar 
  • A handful of Chives (optional)

Directions:

  1. Toss all together in a large bowl and enjoy!
  2. Stores up to 5 days refrigerated in an airtight container.
