Chia Seed Pudding

The Chia Seed, which has become incredibly popular, is loaded with nutrients. Here I have prepared it as a delicious pudding which can be enjoyed as a breakfast, or a dessert. You can prepare it with  creamy coconut milk, or, for a lighter version, substitute almond milk. Either way, it is healthy, delicious and refreshing.

2 cups coconut milk
½ cup Chia Seeds
½ teaspoon vanilla extract
¼ cup raw organic honey
Optional: ¼ teaspoon cinnamon powder


Mix all together in a bowl, transfer to tupperware and let sit over night. Serve with fruit and whipped cream.
