Banana Pumpkin Bread

A Banana Bread and a Pumpkin Bread are fine on their own, but marry the two, and the result is specatacular!

Ingredients:

  1/2 cup unsalted butter, softened
    •    1 cup dark brown sugar, packed
    •    2 large eggs
    •    1 cup 100% pumpkin purée
    •    3 overripe bananas (about 1 cup mashed)
    •    1 tsp vanilla extract
    •    2 cups all-purpose flour, spooned and leveled
    •    2 tsp pumpkin pie spice
    •    1 tsp baking soda
    •    1 tsp salt
    •    1/4 tsp cinnamon
    •    Optional: 1 cup chocolate chips

Directions:

  1. Preheat
    Set oven to 350°F (175°C). Line a loaf pan with parchment paper.
  2. Prepare the banana–pumpkin mixture
    Mash bananas in a bowl. Add pumpkin purée and mix until combined.
  3. Cream the butter and sugar
    Beat softened butter with brown sugar until light and fluffy.
  4. Add eggs and vanilla
    Beat in eggs one at a time. Add vanilla.
  5. Combine mixtures
    Stir the banana–pumpkin mixture into the creamed butter mixture.
  6. Mix dry ingredients
    In another bowl, whisk together flour, pumpkin pie spice, baking soda, salt, and cinnamon.
  7. Fold together
    Gently fold dry ingredients into the wet mixture. Do not overmix.
  8. Add chocolate chips (optional)
    Fold in chocolate chips.
  9. Bake
    Pour batter into loaf pan. Bake 45–60 minutes.
  10. Test for doneness
    Loaf is ready when a toothpick inserted in the center comes out clean.
  11. Cool + Enjoy
    Cool in the pan for 10 minutes, then transfer to a rack. Slice and enjoy!
