A Banana Bread and a Pumpkin Bread are fine on their own, but marry the two, and the result is specatacular!
Ingredients:
1/2 cup unsalted butter, softened
• 1 cup dark brown sugar, packed
• 2 large eggs
• 1 cup 100% pumpkin purée
• 3 overripe bananas (about 1 cup mashed)
• 1 tsp vanilla extract
• 2 cups all-purpose flour, spooned and leveled
• 2 tsp pumpkin pie spice
• 1 tsp baking soda
• 1 tsp salt
• 1/4 tsp cinnamon
• Optional: 1 cup chocolate chips
Directions:
- Preheat
Set oven to 350°F (175°C). Line a loaf pan with parchment paper. - Prepare the banana–pumpkin mixture
Mash bananas in a bowl. Add pumpkin purée and mix until combined. - Cream the butter and sugar
Beat softened butter with brown sugar until light and fluffy. - Add eggs and vanilla
Beat in eggs one at a time. Add vanilla. - Combine mixtures
Stir the banana–pumpkin mixture into the creamed butter mixture. - Mix dry ingredients
In another bowl, whisk together flour, pumpkin pie spice, baking soda, salt, and cinnamon. - Fold together
Gently fold dry ingredients into the wet mixture. Do not overmix. - Add chocolate chips (optional)
Fold in chocolate chips. - Bake
Pour batter into loaf pan. Bake 45–60 minutes. - Test for doneness
Loaf is ready when a toothpick inserted in the center comes out clean. - Cool + Enjoy
Cool in the pan for 10 minutes, then transfer to a rack. Slice and enjoy!
