Gluten Free Chocolate Chip Cookie Dough Stuffed Dates

The perfect sweet holiday bite—no baking required! These refined-sugar-free, gluten-free treats satisfy your sweet tooth while keeping you feeling trim, fit, and satisfied.

Ingredients:

For the Cookie Dough Filling:
    •    ½ cup almond flour
    •    1 tablespoon maple syrup
    •    1 tablespoon almond butter
    •    Splash of vanilla extract
    •    Pinch of salt
    •    Chocolate chips of choice (to taste)

For the Base:
    •    Medjool dates, pitted

Directions:

  1.    Make the cookie dough:
In a small bowl, mix together almond flour, maple syrup, almond butter, vanilla extract, and salt until a smooth dough forms.
    2.    Add the chocolate chips:
Fold in chocolate chips until evenly distributed.
    3.    Stuff the dates:
Gently open each pitted Medjool date and fill with a spoonful of the cookie dough mixture.
    4.    Chill:
Place the stuffed dates in an airtight container and refrigerate until firm—about 20–30 minutes.
    5.    Serve & enjoy:
Keep refrigerated until ready to serve.

Storage
    •    Store in the refrigerator for up to 1 week.
    •    These also freeze beautifully for longer storage.
