To say these are delicious and nutritious would be an understatement. The truth is, both Jeff and I cannot get enough of these. They are both satisfying and healthy, a winning combination. If you are dairy free, try using a plant based cottage cgeese substitute.
Ingredients:
- 1 ripe banana, mashed
- 1 cup cottage cheese
- 2 large eggs
- 1/2 cup blueberries
- 1/4 cup maple syrup
- 1/2 teaspoon baking powder
Directions:
Preheat the oven to 350° F.
Using a wooden spoon, mix all ingreidents together.
Spoon into a lined muffin tin, filling halfway.
Bake for 40 minutes or until cake tester comes out clean.
Store in refrigeratir for 10 days, although I doubt they’ll last that long!
