Apple Spice Cake

It’s apple season and this recioe is the icing on the cake … quite literally. Grated apples and all the fall spices but the secret to its success is the frosting. But don’t take my word for it, try it for yourself!

Ingredients for Cake

  • 3 large Honey Crisp Apples, peel ON, grated using the large holes on a box grater.
  • 2 1/4 Cups Flour
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/2 tsp allspice
  • 1/8 tsp ground cloves
  • 3/4 cup brown sugar
  • 3/4 granulated sugar
  • 2/3 cup vegetable oil
  • 2 large eggs
  • 1/2 cup sour cream (room temperature)
  • 1 tsp vanilla extract

Directions:

Preheat oven to 350° F

Grate apples and set aside.

Sift together all the dry ingredients

Cream together the sugars and oil. Add the 2 eggs and wisk well. Add the vanilla extract.

Combine the dry and wet ingredients.

Fold in the grated apples and pour the batter into a parchment lined 9×13 pan.

Bake at 350° F for about an hour or until cake tester comes out clean.

Frosting

1/4 cup SALTED butter

1/2 cup brown sugar

1 cup powdered sugar

2 tablespoons heavy cream

1/2 teasoon vanilla extract

Beat together all ingredients.

Frost the cake while it is warm.

Will store in fridge up to 3 days (if it lasts that long!)

Alternatively, you can freeze the cake. Bring to room temperature andadd the frosting.
