Applesauce Muffins


2 cups flour
1 tbsp baking powder
3/4 tsp cinnamon
2/3 cup granulated sugar
1 large egg, beaten
1/3 cup unsalted butter, softened
3/4 cup milk
1/2 cup applesauce

1. Preheat oven to 400. Sift together the flour, baking powder and cinnamon. 
2. Cream the sugar and butter. Add the beaten egg, milk and applesauce. 
3. Add dry ingredients and combine until just moistened.
4. Pour into large or mini muffin tin and bake for about 15 to 18 minutes. 

Yields 12 large or 24 mini muffins.
