Cherry, Almond, and Coconut Granola



1 cup unsweetened shaved coconut, big flakes are key!
1/4 cup butter
1/4 cup honey
1/2 tsp vanilla
1/2 tsp salt
2 cups old fashioned rolled oats
1 cup slivered almonds
1/4 cup sesame seeds
2 Tbs brown sugar
1 cup dried cherries unsweetened


Set oven to 275˚. On a rimmed baking sheet, with parchment paper, sprinkle coconut in a single layer and toast until the edges brown, (3-7 minutes). Remove and cool. 

Melt butter, honey, vanilla and salt in a large pot until blended. Add oats, almonds and sesame, then brown sugar. Stir gently until combined. Transfer to parchment paper on a single layer.

Toast granola, stirring every 15 minutes until golden brown, about 40 minutes. Remove tray and cool. Transfer to a big bowl, add cherries and coconut. Enjoy!
