I arrived home the other day and realized that I had nothing prepared for dinner. I looked into the refrigerator. Staring back at me were three breasts of grilled chicken. They looked awfully sad and lonely in their Tupperware container, and I thought of ways of dressing them up and making them look happy again. I searched the pantry for a little inspiration; there I found a good carbohydrate, "Barilla Plus Penne," a multigrain pasta with protein, fiber and omega-3. I decided to take a jar of marinara sauce, add another jar of Trader Joe's Bruschetta, and abracadabra, a nutritious and delicious meal was born quickly and easily. It has since become a family favorite. I encourage you to try it on yours.
Marinade for Grilled Chicken
(makes 6 servings)
- 6 boneless, skinless single chicken breasts
- 1 tbsp olive oil
- 2 tbsp orange juice concentrate
- 1 tsp ground cumin
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/2 tsp pepper
One jar of marinara sauce with one jar of Trader Joe's Bruschetta, an Italian tomato topping with fresh garlic and fresh basil.
